Malibu Cooking Program Day 11 of 15: Overnight Chia Seed Pudding

Time to Prepare: 20 minutes (plus overnight refrigeration)


1 cup almond milk (coconut milk can also be substituted)

¼  cup chia seeds

1 tbsp honey

1 tsp vanilla extract

fruits and berries for topping (optional)

1 scoop of Rejuvenated Energy™ polyphenol supplement powder (optional)


Combine the chia seeds and almond milk in a medium bowl and refrigerate overnight. Cover the bowl and let it chill for about 6 to 12 hours.

Add honey and vanilla extract and mix well. After chilling overnight, the chia seeds should have released their natural “gel” and the pudding-like substance should be seen in the bowl. Mix in the natural sweeteners, and serve in individual glasses or bowls. Add fruit and berry toppings and enjoy.
