Malibu Cooking Program Day 8 of 15: Baked Sweet Potato "Fries"
Time to Prepare: Start to finish 45 minutes (20 minutes active)
2 pounds sweet potatoes, peeled
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
Preheat the oven to 400 degrees Fahrenheit. While oven is warming, add olive oil, garlic powder, paprika, salt and pepper into a bowl. Mix together.
Cut the sweet potatoes into slices. Slicing the sweet potatoes long ways and then short, cut the potato slices into 1/4 to 1/2 inch thick sticks. Having the sweet potato sticks be various shapes and sizes is fine, as long as they don't differ too much from each other.
Coat sweet potato sticks with the seasoned olive oil mixture. You can complete this step by either dropping them into a sealed bag and adding oil mixture, or by drizzling the seasoned oil over the potato sticks in a tossing bowl.
Spread the seasoned-oil coated sweet potato sticks flat onto a baking sheet. The slices should provide enough fries to cover two baking full sheets. Place both baking sheets into the preheated oven.
Bake for 15 minutes, and then flip fries over and bake for another 10 minutes. If you are baking two trays worth of sweet potato fries at the same time in the same oven, rotate their positions in the oven to ensure they both bake evenly.
After brown and crispy all over (not mushy to the touch), pull from oven and serve hot.
